Toasted Muesli with yogurt and blueberries

I re-created this recipe for a gluten free client of mine today because I couldn’t find my Muesli recipe I thought I had on file. I was actually searching for a low sugar, low fat granola recipe (which I thought I had in my collection of recipes), but couldn’t find it. I remember I adapted it from a recipe that I saw on Anna Olsen’s show “Fresh”…but do you think I could find it?!? No! So maybe I committed it to memory instead of my hard drive because I was able to re-create it this a.m. So here it is. I sprinkled it over some yogurt with fresh blueberries, and it tasted great! Toasted Muesli  (PDF)

INGREDIENTS

  • 4 cup Oats, Large oat flakes
  • 1 cup Cranberries
  • 1/2 cup Walnuts, raw
  • 2 large EGG WHITES
  • 1/2 cup APPLESAUCE, UNSWEETENED

DIRECTIONS
Combine oats, pumpkin seeds, walnuts, cranberries in a large bowl. In a separate bowl,
mix together egg whites and apple sauce. Pour over oat mixture and blend in using your
hands.

Preheat oven to 375 degrees F. Spread mixture out thinly over a baking sheet lined with
parchment paper. Bake for 10 minutes, then take out of the oven. Toss mixture, then put
back into the oven for another 10 minutes. Muesli is done baking when oats are slightly
golden.

Take out of the oven to let cool. Place in a large resalable plastic bag for storage.

Serve with yogurt & berries

Nutrition Info.: 1/4 cup = 1 serving

Calories: 140, fat 3g, carbohydrate 23g, fibre 3g, sugar 4g, protein 5g.
